Apparently salt AND/OR lemon juice can cause the muscles to begin to fire. Here's an example:

It is pretty freaky, lol. But in the OP's video, you can see the lemons right next to the fish, so perhaps a combination of both caused this perhaps, and certainly the lemon juice at a minimum. Lemon juice seems that it would get the most striking reaction since it'll permeate through the muscle far quicker.

I can honestly say I've never seen this in all the labs we did in college. I needed cooler professors.

After catching a 15-20* dogfish you wont doubt anything, viscous and plain evil animal designed to eat anything that moves.

Drinking on Gull lake MN I thought it would be cool to throw a 7" deep running Rapala in deep water at FULL THROTTLE.....Dogfish about gut hooked itself over 15mph chasing my bait down, in the boat after a long battle the fish looked like it wanted to beat our ass and takeover the boat.

those fish are mean and i'm pretty shure the last one i caught was thrown in the decomp pile lol
