Nothing magical about it. The only numbers that you can make from the formula are:

9, 18, 27, 36, 45, 54, 63, 72, and 81. So they are all the same symbol. Each time you try it the symbol used for those numbers changes, so as to make it seem like there is some sort of magic I suppose.

Try it once.

11: 1+1=2 11-2= 9
12: 1+2=3 12-3=9
13: 1+3=4 13-4=9

And so on. The guys that "tricked it" apparently did not read the direction right or just are bad at math.:banana1:
