Are there any major differences from the '97s to '00s? Things to look out for?
Im thinking about a 6spd C5 and am not looking to do anything beyond exhaust and other bolt-ons.

you need to hear Jeff's C5. When I heard that car, I almost wept at how beautiful it sang.

I heard that the selectable ride control on the early c5 had problems.

'97-98 had the worse of the PCM's. The '99 + have the better ones. As for injectors, if it's the same as for the F-bodies, the '99-'00 have a weaker fuel pump and injectors. A tune is always worth it.

Me personally, If i were looking for a vette, i'd save a ton of cash and look into a low mileage 2000 FRC so it's like the Z06, but I can make up my own combination for powerplant. I just don't like the Coupes with removable top. But that's personal preference. I'm sure Jeff would be alot better on the explaining of differences.
